Fun Things to do in Utah over Summer

Growing up in San Diego, most summer days were spent at the beach. This is my first summer living in Utah, and my husband and I have been making it a point to adventure and find out the best things to do in Utah over summer. Here is what we have come up with so far:

1. Camping at Silver Lake Flat Reservoir (American Fork Canyon)
Make sure you bring a car that you feel comfortable driving on dirt roads, as there is about a 10 mile uphill drive on a dirt road to get there. Here is an ad I (Sidney) shot while we were there, which shows off how beautiful this place is!
2. Breakfast and Paddle Boarding at Deer Valley Grocery Cafe
Awesome breakfast with a sweet view overlooking a small lake where you can rent paddle boards!

3. Bridge Jumping into the Jordan River (Lehi)
This is kind of hard to find, so here are the coordinates (N 40° 24.371 W 111° 54.013

4. Surfing the Flowrider (Ogden)
There is also one in Provo, but if you go to the one in Ogden on Friday's it's only $5!

5. Cecret Lake Hike and Lonestar Taqueria tacos (Cottonwood Heights)
Awesome, short hike that ends at Cecret Lake. Also, we always go to Lonestar Taqueria for the best fish tacos in Utah afterwards!

Fresh & Easy Summer Chicken Wraps

Regan here bringing you another one of my favorite quick, fresh, and easy go-to recipes!



When Cal was in the hospital one of my friends and neighbors (thanks Meg!) brought us these and they were so yummy! They tasted so fresh and healthy and were the perfect pick-me-up after a long day of sitting in the hospital. I asked her for the recipe and have been making them often ever since, but found a way to make them even a little bit healthier!

Here's the original recipe (this blog has a lot of other yummy-looking wrap recipes that I plan on trying!).  Really the only thing that wasn't super healthy was the chipotle dressing, so I subbed a couple of things and can't tell a bit of a difference! Find my version of the recipe below.



I like to make these at the beginning of the week (sometimes I'll even double the recipe), then throw together these wraps for easy, healthy lunches.


Fresh & Easy Summer Chicken Wraps

You'll need:
Tortillas (my friend brought us a package of those uncooked tortillas and I've used those every time I've made them)
Shredded Chicken (I buy a rotisserie chicken from Costco)
Island Lime Rice (recipe below)
Chipotle Ranch Dressing (recipe below)
Black Bean & Corn Salsa (recipe below)


ISLAND LIME RICE

1 C. Jasmine long-grain rice
1 C. cold water
½ C. chicken stock
1 T. butter
½ t. salt
¼ C. cilantro- chopped
2 T. lime juice

1. In a large sauce pan bring the water and chicken stock to a boil.
2. Add the rice, butter and salt.
3. Cover the pan and reduce the heat to low. Cook for 20 minutes.
4. When the rice is cooked, fluff then stir in the cilantro and lime juice. Mix well.

BLACK BEAN SALSA

1 Can black beans; drained and rinsed
1 C. frozen corn; thawed and drained
1 small or ½ large red pepper; diced
Zest of 1 lime
2 T. lime juice
3 T. cilantro; chopped
1 jalapeno; diced
1 t. salt
½ t. pepper

1. Mix all ingredients together to form the salsa.

CHIPOTLE RANCH DRESSING

1 pkg. Hidden Valley Ranch Dressing mix
1 C. plain Greek yogurt (I use low fat)
1 C. milk
1 Chipotle Pepper (or two if you like extra spicy like us) with 2 T. Adobo sauce (from 1 can of Chipotle Peppers packed in Adobo sauce. You can find these in the Mexican section at most supermarkets.)*

1. In a blender pour the milk and the ranch dressing powder. Mix on high until well blended.
2. Add the Greek yogurt. Blend on high again for a few seconds.
3. Add 1 chipotle pepper and 2 T. of Adobo sauce from the can. Blend again until the dressing comes together.
4. Allow to set up in the refrigerator for at least 30 minutes.



We kind of stuff ours and the tortillas we use aren't huge, so these look more like tacos than wraps but just go with it ;)

Bear Lake 2017

Hey guys! So we just had a big Reilly family reunion in Bear Lake over the 4th of July weekend, and had SO much fun! Most of our family rented a house through Airbnb, and we stayed with Paige's in-laws who have a place there. We LOVE Bear Lake so much and wanted to share some of our pictures from the trip, as well as some pros and cons to visiting Bear Lake as a little travel guide for anybody thinking about visiting! And you all really should...it's SO gorgeous!



Pros/Cons

Pro: One of the biggest pros about going to Bear Lake is how beautiful the water is! It's a gorgeous turquoise color and the water is just really clean and pretty.

Con: That being said, the water is always a little chilly even in the dead of summer which is a con for us (and any other wussies out there ;) For this reason, the best time to go is the end of July through the beginning of September, when the water has had time to heat up, and it's hot enough that you don't mind jumping in cool water!

 


Pro: Cute little lake town. Gorgeous scenery, quiet town.

Con: Not many food options! There's only one small market that often runs out of food on busy weekends, so make sure to get food in Logan on your way up so you're not stuck taking an hour long trip to the grocery store once you're up there!




Where to eat: As far as restaurants, La Beau's is the place to go for burgers and shakes! (Bear Lake is famous for their raspberry shakes). Bear Lake Pizza is also pretty tasty, and Cafe Sabor for Mexican food! (All of these are in Garden City which is where we stayed).

What to bring: Easy ups and coolers with drinks and lunch/snacks for the beach. Rent paddle boards and jet skis once you're there! The jet skis were such a hit.  The kids loved getting rides and we would just beach them when we weren't using them.

Forgiving Beach Dresses

Are we the only ones who save a loose, flowy beach dress or two for the last couple days of vaca? I usually will be looking pretty good at the beginning of a vacation because I've been preparing with eating clean and working out, but who wants to eat clean on vacation?? By the last few days the burgers, shakes and fries are usually starting to show and it's nice to swap out the mom shorts and crop tops for flowy, forgiving dresses :) We've linked our favorites at the bottom of this post!
